Courgette Noodles with Steak

Ingredients

• 2 steaks (rump or fillet), cut into small strips
• 2 large courgettes, carrots, German turnip or 1 butternut squash,
spiralised into noodles (using a spiral vegetable slicer)
• 1 onion, chopped
• 1 cup red cabbage, finely sliced
• 1 cup chestnut mushrooms, chopped
• Handful coriander, finely chopped
• Handful basil, finely chopped
• 2 tablespoons grated turmeric
• 2 tablespoons grated ginger
• 2 tablespoons apple cider vinegar or lemon
• 1 tablespoon organic mustard
• Olive oil for cooking
• Handful chives, finely chopped for garnish
• ¼ cup shaved fennel
• ½ teaspoon paprika
• 1 clove garlic chopped
• Nigella seeds
• ½ teaspoon asafoetida (spice often used with turmeric)

Instructions

• Drizzle a little olive oil in a pan over low heat
• Add in the onion, cook until soft
• Add strips of beef and cook for 2-3 mins. Remove from pan
• Add the courgettes (or carrots, German turnip or butternut squash),
red cabbage, mushrooms, coriander, basil, turmeric, ginger, lemon (or
apple cider vinegar) and mustard (if using)
• Once cooked through, add the steak to the vegetables and spices
• Once hot, serve with chopped chives as garnish
